Ingredients

  • 3 large ripe bananas firm but sweet
  • 0.5 cup creamy peanut butter
Coating
  • 1 cup dark chocolate chips or chopped chocolate bar
  • 1 tbsp coconut oil for melting
  • 1 tsp flaky sea salt optional, for topping

  • Parchment paper
  • Microwave-safe bowl

Method
 

  1. Line a baking sheet with parchment paper. Peel and slice bananas into rounds approx 1/4 to 1/2 inch thick.
  2. Arrange half the slices on the sheet. Spread about 1 teaspoon of peanut butter on each.
  3. Top with remaining banana slices to create sandwiches. Freeze for at least 1 hour until solid.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip frozen banana sandwiches halfway into the melted chocolate.
  6. Place back on parchment paper and immediately sprinkle with flaky sea salt before chocolate sets.
  7. Return to freezer for 15-20 minutes to set completely. Store in an airtight container in the freezer.

Notes

Ensure bananas are frozen solid before dipping to prevent them from sliding apart in the warm chocolate.
