Method
- Line a baking sheet with parchment paper. Peel and slice bananas into rounds approx 1/4 to 1/2 inch thick.
- Arrange half the slices on the sheet. Spread about 1 teaspoon of peanut butter on each.
- Top with remaining banana slices to create sandwiches. Freeze for at least 1 hour until solid.
- Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip frozen banana sandwiches halfway into the melted chocolate.
- Place back on parchment paper and immediately sprinkle with flaky sea salt before chocolate sets.
- Return to freezer for 15-20 minutes to set completely. Store in an airtight container in the freezer.
Notes
Ensure bananas are frozen solid before dipping to prevent them from sliding apart in the warm chocolate.
