Ingredients
  

Yogurt Base
  • 1 cup Greek yogurt plain, full-fat recommended
  • 0.5 cup creamy peanut butter
  • 2 tbsp honey or maple syrup adjust to taste
  • 1 tsp vanilla extract
Toppings
  • 0.33 cup chocolate chips divided (for topping and drizzle)
  • 1 tsp coconut oil for melting chocolate

Equipment

  • Muffin tin or silicone mold
  • Mixing bowl
  • Whisk
  • Microwave-safe bowl

Method
 

  1. Line a muffin tin with cupcake liners or use a silicone mold.
  2. In a mixing bowl, whisk together Greek yogurt, peanut butter, honey, and vanilla extract until smooth and creamy.
  3. Spoon the mixture evenly into the muffin cups (fill about halfway).
  4. Sprinkle chocolate chips on top of each bite.
  5. Place in the freezer for 1 hour to semi-set.
  6. Melt remaining chocolate chips with coconut oil in the microwave in 15-second intervals.
  7. Drizzle melted chocolate over the semi-frozen bites.
  8. Freeze for an additional 1-2 hours until completely solid. Serve cold.

Notes

Let sit at room temperature for 3-5 minutes before eating for best texture.
