Method
- Line a muffin tin with cupcake liners or use a silicone mold.
- In a mixing bowl, whisk together Greek yogurt, peanut butter, honey, and vanilla extract until smooth and creamy.
- Spoon the mixture evenly into the muffin cups (fill about halfway).
- Sprinkle chocolate chips on top of each bite.
- Place in the freezer for 1 hour to semi-set.
- Melt remaining chocolate chips with coconut oil in the microwave in 15-second intervals.
- Drizzle melted chocolate over the semi-frozen bites.
- Freeze for an additional 1-2 hours until completely solid. Serve cold.
