Ingredients
  

Bite Base
  • 1 cup plain Greek yogurt thick, preferably full-fat
  • 0.5 cup natural peanut butter creamy, no added sugar
  • 2-3 tbsp maple syrup or raw honey, to taste
  • 0.5 tsp vanilla extract pure
  • 0.33 cup mini dark chocolate chips plus extra for topping
Optional Garnish
  • 1 tbsp peanut butter melted, for drizzle
  • 1 tbsp chocolate chips melted, for drizzle

Method
 

  1. Line a large metal baking sheet with parchment paper.
  2. In a medium bowl, thoroughly mix the Greek yogurt, natural peanut butter, maple syrup, and vanilla extract until completely smooth.
  3. Gently fold in the mini dark chocolate chips until evenly distributed.
  4. Use a small cookie scoop to drop 1-inch mounds of the mixture onto the prepared baking sheet.
  5. Place the baking sheet in the freezer for 1 to 2 hours until the bites are solid.
  6. If desired, drizzle the frozen bites with melted peanut butter and melted chocolate. Return to the freezer for 5 minutes to set.
  7. Transfer the firm bites to an airtight freezer bag or container and store for up to 2 months. Eat directly from the freezer.

Notes

Using full-fat Greek yogurt prevents the bites from becoming too icy and yields a much creamier, ice-cream-like texture.
