Ingredients
  

Watermelon Bites
  • 4-5 cups seedless watermelon cut into 1-inch cubes
  • 2 whole limes zested and juiced
  • 2 tbsp granulated sugar or monk fruit sweetener
  • 1 pinch flaky sea salt optional

  • Parchment paper

  • Microplane or zester

Method
 

  1. Line a large baking sheet with parchment paper.
  2. Cut the seedless watermelon into uniform 1-inch cubes and place them in a large mixing bowl.
  3. Zest the limes directly over the watermelon cubes, then cut the limes and squeeze the fresh juice over the fruit.
  4. Sprinkle the sugar (and a pinch of salt if using) evenly over the top.
  5. Gently toss the watermelon cubes with your hands or a spatula until evenly coated, being careful not to mash the fruit.
  6. Arrange the coated cubes in a single layer on the prepared baking sheet, ensuring they do not touch.
  7. Place the baking sheet in the freezer for at least 2 hours, or until the cubes are frozen solid.
  8. Serve immediately while frozen, or transfer to an airtight freezer bag for long-term storage.

Notes

Do not skip freezing them on a tray first, or they will stick together in a giant clump in the freezer bag. Serve as snacks or use as flavorful ice cubes in summer drinks.
