Ingredients
  

Fruit Base
  • 4 cups seedless watermelon cut into 1-inch cubes
Flavor Coating
  • 2 tbsp fresh lime juice
  • 1 tbsp granulated sugar adjust to taste
  • 1 tsp lime zest optional
  • 1 pinch flaky sea salt optional

Method
 

  1. Carefully slice the seedless watermelon into uniform 1-inch cubes and place them into a large mixing bowl.
  2. Pour the fresh lime juice over the watermelon cubes. Sprinkle evenly with the granulated sugar and optional lime zest.
  3. Gently toss the watermelon with your hands or a large spoon until every piece is evenly coated, being careful not to mash the fruit.
  4. Line a large baking sheet with parchment paper to prevent sticking.
  5. Transfer the coated watermelon cubes to the baking sheet, arranging them in a single layer so that none of the pieces are touching.
  6. Place the baking sheet in the freezer for at least 2 hours, or until the bites are completely frozen solid.
  7. Transfer to a chilled serving plate, sprinkle with a tiny pinch of flaky sea salt if desired, and serve immediately.

Notes

Once completely frozen solid on the baking sheet, you can transfer the bites into an airtight freezer bag for long-term storage up to 1 month.
