Ingredients
  

Custard Base
  • 4 slices thick-cut brioche bread day-old is best
  • 3 large eggs
  • 0.5 cup whole milk
  • 0.25 cup heavy cream
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon ground
  • 1 pinch salt
  • 2 tbsp butter for frying
Toppings
  • 1 cup fruity cereal puffs berry shaped
  • 0.5 cup whipped cream
  • 0.25 cup maple syrup warm
  • 1 tbsp powdered sugar for dusting
  • 4 fresh strawberries for garnish

Equipment

  • Large Skillet or Griddle
  • Shallow mixing bowl
  • Whisk
  • Spatula

Method
 

  1. In a shallow bowl, whisk together eggs, milk, cream, vanilla, cinnamon, and salt until smooth.
  2. Preheat a large skillet or griddle over medium heat and melt 1 tablespoon of butter.
  3. Dip each slice of bread into the custard mixture, allowing it to soak for 10-15 seconds per side. Do not oversaturate.
  4. Place soaked bread onto the hot skillet. Cook for 3-4 minutes until golden brown and crispy on the bottom.
  5. Flip and cook the other side for another 2-3 minutes. Add more butter to the pan if needed between slices.
  6. Transfer warm French toast to plates.
  7. Top generously with a large dollop of whipped cream.
  8. Sprinkle the fruity cereal puffs over the cream and the toast.
  9. Drizzle with warm maple syrup and dust with powdered sugar. Garnish with a strawberry.

Notes

For extra crunch, you can lightly crush some cereal and press it onto the wet bread before frying, but be careful of burning the sugar.
