Fudgy Copycat Cosmic Brownies

Ingredients
  

Brownie Base
  • 0.75 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 2 eggs large
  • 2 tsp vanilla extract
  • 0.75 cup unsweetened cocoa powder Dutch-processed preferred
  • 0.5 cup all-purpose flour + 1 tbsp
  • 1 tsp cornstarch
  • 0.25 tsp salt
Ganache Topping
  • 1.5 cups semi-sweet chocolate chips
  • 0.5 cup heavy cream
  • 0.5 cup rainbow candy chips cosmic sprinkles

Equipment

  • 8x8 inch baking pan
  • Mixing bowls
  • Whisk
  • Saucepan or microwave-safe bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until glossy.
  3. Add eggs and vanilla extract; whisk until smooth and combined.
  4. Sift in cocoa powder, flour, cornstarch, and salt. Gently fold with a spatula until just combined.
  5. Pour batter into pan and smooth the top. Bake for 22-25 minutes. Do not overbake. Cool completely.
  6. For ganache: Heat heavy cream until simmering. Pour over chocolate chips. Let sit 5 mins, then whisk until smooth.
  7. Pour warm ganache over cooled brownies. Sprinkle with rainbow chips immediately.
  8. Refrigerate for 1 hour to set before slicing into squares.

Notes

Store in the fridge for the fudgiest texture. Use a hot knife to cut clean squares.
