- Microwave halved potatoes in a covered bowl with a splash of water for 5-7 minutes until tender.
- Pat steak bites dry and toss with olive oil, salt, pepper, onion powder, and half the oregano.
- Heat a skillet over medium-high heat. Sear steak bites in batches for 3-4 minutes until browned. Remove and set aside.
- In the same skillet, add the drained potatoes. Sauté for 5-8 minutes until crispy and golden.
- Reduce heat to medium-low. Add butter, minced garlic, and remaining oregano to the pan.
- Once butter is melted and garlic is fragrant, return steak to the pan.
- Toss everything together until well-coated in the garlic butter sauce.
- Garnish with fresh parsley and serve hot.
