Ingredients
  

Steak Bites
  • 1.5 lbs steak bites sirloin or ribeye, cut into 1-inch cubes
  • 3 tbsp butter for searing
  • 4 cloves garlic minced
  • 1 tbsp fresh thyme
Cheesy Tortellini
  • 20 oz cheese tortellini package
  • 2 tbsp butter for sauce
  • 1 cup heavy cream
  • 1.5 cups Parmesan + Mozzarella combo shredded
  • 1 pinch black pepper freshly cracked
  • 1 pinch nutmeg

  • Cast Iron Skillet
  • Colander

Method
 

  1. Bring a large pot of salted water to a boil. Cook tortellini according to package directions (usually 2-3 minutes). Drain and set aside.
  2. In a large skillet over medium heat, melt 2 tbsp butter. Add heavy cream and simmer for 2-3 minutes until slightly thickened.
  3. Lower heat and stir in the Parmesan and Mozzarella cheese blend until melted and smooth. Season with black pepper and nutmeg.
  4. In a separate heavy skillet, heat over high heat. Pat steak bites dry and season with salt and pepper.
  5. Add 3 tbsp butter to the hot skillet. Sear steak bites for 2-3 minutes until browned.
  6. Add minced garlic and fresh thyme to the steak. Cook for another 1-2 minutes until steak is cooked to preference and garlic is fragrant.
  7. Toss the cooked tortellini into the cream sauce to coat evenly.
  8. Serve the tortellini topped with the hot garlic butter steak bites. Garnish with cracked pepper.

Notes

Ensure steak is at room temperature before searing for best results.
