- Preheat oven to 375°F (190°C). Grease a 9x5 loaf pan or line a baking sheet with parchment paper.
- In a large bowl, whisk together eggs, milk, salt, pepper, and Italian seasoning.
- Add ground beef, breadcrumbs, onion, garlic, parmesan, and parsley to the bowl. Mix gently with hands until just combined.
- Shape mixture into a loaf on the baking sheet or press into the loaf pan.
- Bake for 50-60 minutes, or until internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 10-15 minutes.
- While meatloaf rests, melt butter in a saucepan over medium heat. Add garlic and cook 1 minute.
- Add heavy cream and simmer for 2-3 minutes. Remove from heat and whisk in parmesan cheese until smooth.
- Pour sauce over meatloaf, slice, and serve immediately.
Notes
For a crispy crust, bake the meatloaf free-form on a baking sheet rather than inside a loaf pan.
