Ingredients
  

Meatloaf
  • 1.5 lbs ground beef 80/20 preferred
  • 0.75 cup plain breadcrumbs
  • 0.5 cup whole milk
  • 2 large eggs lightly beaten
  • 0.33 cup Parmesan cheese grated
  • 1 small yellow onion grated or finely minced
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
Garlic Parmesan Sauce
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup Parmesan cheese freshly grated
  • 1 pinch salt and pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and line a rimmed baking sheet with foil.
  2. In a large bowl, mix breadcrumbs and milk. Let sit for 5 minutes.
  3. Add eggs, parmesan, grated onion, minced garlic, Worcestershire, Italian seasoning, salt, and pepper to the bowl. Stir to combine.
  4. Gently crumble the ground beef into the bowl. Fold together with your hands just until mixed. Do not overwork.
  5. Form the meat mixture into a 9x5 inch loaf on the prepared baking sheet. Bake for 45-55 minutes until internal temp reaches 160°F.
  6. While meatloaf bakes, melt butter in a saucepan over medium heat. Sauté garlic for 1 minute. Whisk in flour and cook for 1 minute.
  7. Slowly whisk in chicken broth and heavy cream. Simmer for 3-4 minutes until thickened.
  8. Remove from heat. Whisk in the freshly grated Parmesan until smooth. Season with salt and pepper.
  9. Let the baked meatloaf rest for 10 minutes before slicing. Serve slices generously smothered in the garlic parmesan sauce and garnished with fresh parsley.

Notes

Always use freshly grated Parmesan cheese from a block for the sauce to ensure it melts smoothly without becoming gritty.
