Method
- Fill a rocks glass or highball glass completely with ice.
- Pour the orange juice directly into the bottom of the glass over the ice.
- In a shaker or separate glass with a little ice, combine the white rum and peach schnapps. Stir gently to chill.
- Strain the chilled rum and schnapps mixture over the orange juice.
- Place a bar spoon upside down just above the liquid line. Slowly pour the cranberry juice over the back of the spoon so it floats, creating a red top layer.
- Garnish with a fresh peach slice and a mint sprig. Instruct guests to stir before drinking.
Notes
To ensure the perfect layered effect, make sure you pour the cranberry juice extremely slowly over the back of the spoon. The specific gravity keeps the denser juices at the bottom and the lighter cranberry at the top.
