Golden Oreo Sand Pudding Cups

A fun, beach-themed no-bake dessert featuring layers of crushed Golden Oreos and a rich, creamy vanilla pudding mixture, topped with gummy sea creatures and paper umbrellas.

Ingredients
  

Cookie Sand
  • 1 package Golden Oreos approx 14.3 oz
Pudding Filling
  • 8 oz cream cheese softened to room temperature
  • 0.25 cup unsalted butter softened to room temperature
  • 1 cup powdered sugar sifted
  • 2 boxes instant vanilla pudding mix 3.4 oz each
  • 2.75 cups cold milk whole milk preferred
  • 8 oz whipped topping (Cool Whip) thawed
Decorations
  • 12 gummy starfish or Swedish fish
  • 12 miniature paper drink umbrellas

Equipment

  • Food processor or rolling pin
  • Electric Mixer
  • Mixing bowls
  • Clear plastic cups (9-12 oz)

Method
 

  1. Crush the entire package of Golden Oreos (cookies and filling) in a food processor until they resemble fine sand. Set aside.
  2. In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar and beat until fluffy.
  3. In a separate bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until thickened.
  4. Pour the thickened pudding into the cream cheese mixture and beat until fully combined and smooth.
  5. Gently fold the thawed whipped topping into the pudding mixture using a spatula until no streaks remain.
  6. Assemble the cups: Place about 2 tablespoons of cookie sand into the bottom of each clear cup. Pipe or spoon a layer of the pudding mixture over the sand.
  7. Repeat the layers, ending with a final layer of cookie sand on top to look like a beach.
  8. Refrigerate the cups for at least 2 hours to set.
  9. Just before serving, decorate the top of each cup with a gummy starfish and a paper umbrella.

Notes

Cups can be made up to 2 days in advance. Add decorations right before serving so the paper umbrellas don't get soggy.
