- Grate 1/4 cup of cucumber and squeeze out excess moisture using a paper towel.
- In a small bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill to make the tzatziki.
- Toss the cooked chicken with dried oregano, salt, and pepper.
- Preheat oven to 400°F and toast flatbreads for 3-5 minutes until warm.
- Spread a thick layer of tzatziki sauce over each toasted flatbread.
- Top with chicken, cherry tomatoes, diced cucumbers, and red onion.
- Garnish with fresh parsley and a heavy drizzle of extra virgin olive oil.
- Slice and serve immediately.
