Ingredients
  

Tzatziki Sauce
  • 0.5 cup Greek yogurt plain
  • 0.25 cup cucumber grated and squeezed dry
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 0.5 tsp dried dill
Flatbread Assembly
  • 2 flatbreads or naan
  • 1.5 cups cooked chicken breast cubed
  • 1 tsp dried oregano
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup cucumber diced
  • 0.25 red onion sliced
  • 2 tbsp olive oil for drizzling

Method
 

  1. Grate 1/4 cup of cucumber and squeeze out excess moisture using a paper towel.
  2. In a small bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill to make the tzatziki.
  3. Toss the cooked chicken with dried oregano, salt, and pepper.
  4. Preheat oven to 400°F and toast flatbreads for 3-5 minutes until warm.
  5. Spread a thick layer of tzatziki sauce over each toasted flatbread.
  6. Top with chicken, cherry tomatoes, diced cucumbers, and red onion.
  7. Garnish with fresh parsley and a heavy drizzle of extra virgin olive oil.
  8. Slice and serve immediately.

Notes

For extra flavor, add crumbled feta cheese or kalamata olives.
