Ingredients
  

Marinade & Chicken
  • 1.5 lbs chicken tenders or breast sliced into strips
  • 0.25 cup extra virgin olive oil
  • 3 tbsp lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 lemon cut into wedges

Method
 

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika until emulsified.
  2. Add chicken tenders to the bowl and toss to coat thoroughly. Let sit for 10-15 minutes if time permits.
  3. Heat a large skillet over medium-high heat. Once hot, arrange chicken tenders in a single layer (cook in batches if needed).
  4. Sear for 3-4 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  5. Remove from heat and let rest for 5 minutes.
  6. Garnish with fresh parsley and serve warm with lemon wedges.

Notes

Store leftovers in an airtight container for up to 3 days. Great for salads!
