Ingredients
  

Grilled Chicken
  • 2 large boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
Broccoli Base
  • 4 cups broccoli florets fresh
  • 1 tbsp olive oil
Creamy Garlic Sauce
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy whipping cream
  • 0.25 cup chicken broth low sodium
  • 0.5 cup Parmesan cheese freshly grated
  • 0.5 tsp Italian seasoning

Method
 

  1. Mix olive oil, garlic powder, paprika, onion powder, salt, and pepper. Rub all over chicken breasts and let sit for 10 minutes.
  2. Preheat grill or grill pan over medium-high heat. Cook chicken 5-7 minutes per side until internal temp reaches 165°F. Let rest before slicing.
  3. Steam or pan-sauté broccoli florets with 1 tbsp olive oil until tender-crisp. Season with a pinch of salt and pepper.
  4. In a saucepan, melt butter over medium-low heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Whisk in heavy cream, chicken broth, and Italian seasoning. Simmer gently for 3-4 minutes to reduce slightly.
  6. Reduce heat to low, slowly whisk in grated Parmesan until melted and sauce is thick. Remove from heat.
  7. Divide cooked broccoli into bowls, top with sliced grilled chicken, and pour the warm garlic cream sauce generously over the top.

Notes

Always use block Parmesan cheese and grate it yourself; pre-shredded cheese will make the sauce clumpy.
