Ingredients
  

Chicken & Marinade
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Broccoli Base
  • 4 cups broccoli florets fresh
  • 1 tbsp olive oil or butter
  • 2 tbsp water for steaming
Creamy Garlic Sauce
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy whipping cream
  • 0.5 cup Parmesan cheese grated
  • 0.5 tsp Italian seasoning

Method
 

  1. Toss chicken breasts with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper. Let marinate for 15 minutes.
  2. Grill chicken over medium-high heat for 6-8 minutes per side until cooked through (165°F internal). Rest for 5 minutes, then slice.
  3. In a skillet over medium heat, sauté broccoli in olive oil for 2 minutes. Add water, cover, and steam for 3-4 minutes until tender-crisp. Transfer to bowls.
  4. In the same skillet, melt butter over medium-low heat. Sauté minced garlic for 1 minute until fragrant.
  5. Whisk in heavy cream and Italian seasoning. Simmer gently for 3-4 minutes.
  6. Reduce heat to low. Whisk in Parmesan cheese until completely melted and sauce is smooth and thickened. Season with salt and pepper.
  7. Top the broccoli with sliced grilled chicken, then pour the creamy garlic sauce heavily over the top. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave.
