Ingredients
  

Chicken & Seasoning
  • 4 boneless skinless chicken breasts pounded to even thickness
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 dash Salt and black pepper to taste
Caprese Toppings
  • 8 oz fresh mozzarella cheese sliced thick
  • 2 large tomatoes sliced thick
  • 0.5 cup fresh basil leaves cut into ribbons (chiffonade)
  • 0.25 cup balsamic glaze store-bought or homemade

  • Outdoor Grill or Grill Pan
  • Meat mallet
  • Digital Meat Thermometer
  • Tongs

Method
 

  1. Pound chicken breasts to an even 1/2-inch thickness. Brush with olive oil and season evenly with Italian seasoning, garlic powder, salt, and pepper.
  2. Preheat grill to medium-high heat. Oil the grates to prevent sticking.
  3. Grill chicken for 5-6 minutes per side until charred and internal temperature reaches 160°F.
  4. During the last 2 minutes of grilling, top each chicken breast with slices of fresh mozzarella. Close the grill lid to melt the cheese.
  5. Remove chicken from grill and let rest for 3-5 minutes.
  6. Top each cheesy chicken breast with a slice of fresh tomato and fresh basil ribbons.
  7. Drizzle generously with balsamic glaze just before serving. Enjoy!

Notes

Pounding the chicken is essential for even cooking on the grill so the thin ends do not dry out.
