Hawaiian Ham and Pineapple Skewers

Ingredients
  

For the Skewers
  • 1.5 lbs thick-cut ham fully cooked, cut into 1-inch cubes
  • 1 large fresh pineapple peeled, cored, cut into 1-inch cubes
Sticky Glaze
  • 0.33 cup brown sugar packed
  • 0.25 cup soy sauce
  • 0.25 cup pineapple juice
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 0.5 tsp garlic powder

Equipment

  • Grill or grill pan
  • Wooden or metal skewers
  • Basting brush
  • Small Saucepan

Method
 

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
  2. In a small saucepan, whisk together brown sugar, soy sauce, pineapple juice, Dijon mustard, vinegar, and garlic powder.
  3. Simmer the glaze over medium heat for 3-5 minutes until sugar dissolves and sauce thickens slightly. Set aside.
  4. Thread alternating cubes of ham and fresh pineapple onto the prepared skewers.
  5. Preheat grill to medium-high heat and oil the grates.
  6. Grill skewers for 3-4 minutes per side until lightly charred.
  7. During the last 2 minutes of cooking, brush generously with the sticky glaze, allowing it to caramelize.
  8. Remove from grill and serve immediately.

Notes

This is a fantastic way to repurpose leftover holiday ham! Be sure to use fresh pineapple over canned, as it holds up much better on the grill grates.
