Ingredients
  

Fries Assembly
  • 2 medium zucchini cut into sticks
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 olive oil spray for cooking

  • Shallow Bowls
  • Knife and cutting board
  • Tongs

Method
 

  1. Wash zucchini and trim ends. Cut into half horizontally, then into uniform sticks approx 1/2 inch thick.
  2. Set up 3 bowls: One with flour/salt/pepper, one with beaten eggs, one with Panko/Parmesan/spices mixed together.
  3. Dredge zucchini sticks in flour, shake off excess.
  4. Dip into egg wash until fully coated.
  5. Press firmly into Panko mixture to coat on all sides.
  6. Preheat air fryer to 400°F (200°C).
  7. Arrange fries in a single layer in the basket. Spray generously with olive oil spray.
  8. Air fry for 8-10 minutes, flipping halfway and spraying dry spots with more oil.
  9. Serve hot with dipping sauce.

Notes

Pat zucchini dry with paper towels before breading for extra crispiness.
