Method
- Wash zucchini and trim ends. Cut into half horizontally, then into uniform sticks approx 1/2 inch thick.
- Set up 3 bowls: One with flour/salt/pepper, one with beaten eggs, one with Panko/Parmesan/spices mixed together.
- Dredge zucchini sticks in flour, shake off excess.
- Dip into egg wash until fully coated.
- Press firmly into Panko mixture to coat on all sides.
- Preheat air fryer to 400°F (200°C).
- Arrange fries in a single layer in the basket. Spray generously with olive oil spray.
- Air fry for 8-10 minutes, flipping halfway and spraying dry spots with more oil.
- Serve hot with dipping sauce.
Notes
Pat zucchini dry with paper towels before breading for extra crispiness.
