High Protein Pizza Hot Pockets

Ingredients
  

Dough
  • 1.5 cups self-rising flour (plus extra for dusting)
  • 1 cup non-fat Greek yogurt must be thick
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
Filling
  • 0.5 cup pizza sauce low sugar preferred
  • 0.75 cup part-skim mozzarella cheese shredded
  • 0.5 cup turkey pepperoni sliced or chopped
  • 2 tbsp parmesan cheese grated
Topping
  • 1 egg large, beaten (for egg wash)
  • 1 tsp dried oregano

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together self-rising flour, garlic powder, and Italian seasoning.
  3. Add Greek yogurt and mix until a shaggy dough forms. Transfer to a floured surface and knead for 2-3 minutes until smooth.
  4. Divide dough into 4 equal balls. Roll each into a 1/4 inch thick circle.
  5. Place sauce, mozzarella, and pepperoni on one half of each circle, leaving room at the edges.
  6. Fold dough over filling and crimp edges tightly with a fork to seal.
  7. Place on baking sheet, brush with egg wash, and sprinkle with oregano.
  8. Bake for 18-22 minutes until golden brown. Let cool slightly before serving.

Notes

Ensure you use thick Greek yogurt; regular yogurt is too watery. If dough is sticky, add more flour gradually.
