Homemade Cherry Dole Whip Float

Ingredients
  

Cherry Soft Serve
  • 16 oz frozen dark sweet cherries do not thaw
  • 0.25 cup pineapple juice
  • 0.5 cup canned full-fat coconut milk or heavy cream
  • 3 tbsp powdered sugar adjust to taste
  • 1 tbsp lemon juice freshly squeezed
Float Base
  • 2 cans cherry cola chilled

Equipment

  • High-powered blender or food processor
  • Piping bag
  • Large star piping tip (1M or 2D)
  • Tall serving glasses

Method
 

  1. Chill your blender pitcher and serving glasses in the freezer for 15 minutes before starting.
  2. In a high-powered blender or food processor, combine the frozen cherries, pineapple juice, coconut milk, powdered sugar, and lemon juice.
  3. Blend on medium-high speed, stopping frequently to scrape down the sides with a spatula, until the mixture is thick, smooth, and resembles soft serve ice cream.
  4. Transfer the cherry mixture into a large piping bag fitted with a large star tip. If the mixture is too soft, place the bag in the freezer for 10-15 minutes.
  5. Pour the chilled cherry cola into your cold serving glasses, filling them about halfway to two-thirds full.
  6. Carefully pipe the cherry soft serve in a tall swirl directly on top of the soda. Serve immediately with a spoon and straw.

Notes

If you don't have a piping bag, you can easily scoop the cherry soft serve over the soda using an ice cream scoop. For an adult version, add a splash of dark rum to the soda before topping.
