Method
- Add the pineapple juice to the bottom of a high-powered blender.
- Add the vanilla ice cream, followed by the frozen pineapple chunks.
- Blend on high speed, using a tamper tool to push the ingredients into the blades, until the mixture is thick, smooth, and creamy. Do not over-blend.
- Scoop immediately into cups, or transfer to a piping bag with a star tip to pipe classic soft-serve swirls.
Notes
If the mixture becomes too soft after blending, place it in the freezer for 15-20 minutes before serving to firm up the soft-serve texture.
