Ingredients

Whip Ingredients
  • 1/2 cup pineapple juice
  • 2 cups frozen pineapple chunks
  • 1 cup vanilla ice cream
Garnish
  • 2 wedges fresh pineapple optional

Equipment

  • High-powered blender
  • Measuring cups
  • Piping bag with large star tip (optional)

Method

  1. Place your blender pitcher in the freezer for 10 minutes to chill.
  2. Add the pineapple juice, vanilla ice cream, and frozen pineapple chunks into the blender.
  3. Blend on low initially, using a tamper if necessary to push the frozen fruit into the blades. Gradually increase speed.
  4. Blend until the mixture is completely smooth, thick, and creamy. Do not over-blend.
  5. Transfer the mixture to a piping bag fitted with a large star tip (or a zip-top bag with the corner snipped).
  6. Pipe in an upward swirling motion into cups. Garnish with fresh pineapple wedges and serve immediately.

Notes

If the mixture is too soft after blending, place it in the freezer for 30 minutes to firm up before piping.
