  • 1.5 lbs Brussels sprouts trimmed and halved
  • 3 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Glaze
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2-3 cloves garlic minced
Garnish
  • 1 tsp sesame seeds toasted

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the Brussels sprouts, trim the bottom stems, and slice them in half vertically. Discard any yellowed outer leaves.
  3. In a large bowl, toss the halved sprouts with olive oil, salt, and black pepper until evenly coated.
  4. Spread the sprouts out on a large metal baking sheet. Ensure every sprout is turned flat, cut-side down against the pan. Do not overcrowd.
  5. Roast in the preheated oven for 20-25 minutes until the bottoms are deeply caramelized and crispy, and the centers are tender.
  6. While roasting, whisk together the honey, soy sauce, and minced garlic in a small bowl.
  7. Remove the pan from the oven. Immediately pour the honey garlic mixture over the hot sprouts directly on the baking sheet. Toss to coat well; the residual heat will thicken the glaze.
  8. Sprinkle evenly with sesame seeds and serve immediately.

Notes

For the crispiest results, place your empty baking sheet in the oven while it preheats so the sprouts sizzle as soon as they hit the hot pan.
