Ingredients
  

Potatoes & Glaze
  • 2 lbs baby potatoes halved
  • 0.33 cup olive oil extra virgin
  • 0.25 cup honey
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
Toppings
  • 7 oz feta cheese cubed or crumbled
  • 3 sprigs fresh rosemary
  • 1 tbsp lemon juice freshly squeezed

  • Large Mixing Bowl

  • Parchment paper

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash potatoes and cut them in half (or leave whole if very small). Pat dry.
  3. In a small bowl, whisk together olive oil, honey, minced garlic, oregano, salt, pepper, and red pepper flakes.
  4. Place potatoes in a large bowl, pour the glaze over them, and toss to coat evenly.
  5. Arrange potatoes cut-side down on the baking sheet. Roast for 20-25 minutes.
  6. Remove from oven, flip potatoes, and scatter fresh rosemary sprigs on the tray. Roast for another 15-20 minutes until golden and tender.
  7. Transfer hot potatoes to a serving bowl and immediately toss with cubed feta cheese.
  8. Drizzle with lemon juice and serve immediately.

Notes

For extra crispy potatoes, parboil them for 5 minutes before tossing in the glaze.
