- Cook the white rice according to package instructions and keep warm.
- In a small bowl, whisk together honey, lime juice, soy sauce, garlic, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and sear for 3-4 minutes until browned.
- Flip the chicken and cook for another 2 minutes. Pour the honey lime sauce over the chicken.
- Reduce heat to medium. Simmer and stir continuously for 3-5 minutes until the sauce reduces into a thick, sticky glaze coating the chicken.
- Slice the avocados thinly.
- Assemble the stack: Place a mound of rice on a plate, top with glazed chicken and pan drippings, and finish with fanned avocado slices.
- Garnish with chopped cilantro and sesame seeds. Serve immediately.
Notes
Do not slice the avocado until right before serving to prevent browning.
