Honey Lime Chicken and Avocado Rice Stack

Ingredients
  

Chicken & Marinade
  • 1.5 lbs boneless skinless chicken breasts cut into bite-sized pieces
  • 0.25 cup honey
  • 3 tbsp lime juice freshly squeezed
  • 2 tbsp soy sauce low sodium
  • 3 cloves garlic minced
  • 1 tbsp olive oil for cooking
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Base & Toppings
  • 2 cups white rice cooked
  • 2 large avocados sliced
  • 2 tbsp cilantro chopped, for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

  1. Cook the white rice according to package instructions and keep warm.
  2. In a small bowl, whisk together honey, lime juice, soy sauce, garlic, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and sear for 3-4 minutes until browned.
  4. Flip the chicken and cook for another 2 minutes. Pour the honey lime sauce over the chicken.
  5. Reduce heat to medium. Simmer and stir continuously for 3-5 minutes until the sauce reduces into a thick, sticky glaze coating the chicken.
  6. Slice the avocados thinly.
  7. Assemble the stack: Place a mound of rice on a plate, top with glazed chicken and pan drippings, and finish with fanned avocado slices.
  8. Garnish with chopped cilantro and sesame seeds. Serve immediately.

Notes

Do not slice the avocado until right before serving to prevent browning.
