Honey Mustard Turkey Avocado Sandwich

Ingredients
  

Sandwich Base
  • 2 slices artisan multigrain bread thick cut
  • 1 tbsp butter or olive oil for toasting
  • 5 oz roasted turkey breast sliced
  • 0.5 avocado ripe, sliced
  • 2 slices sharp cheddar cheese
  • 1 cup arugula fresh
Honey Mustard Sauce
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp lemon juice optional
  • 1 pinch paprika

Equipment

  • Skillet or Griddle
  • Small mixing bowl
  • Serrated Knife
  • Whisk

Method
 

  1. In a small bowl, whisk together mayonnaise, Dijon mustard, honey, lemon juice, and paprika until smooth and glossy.
  2. Butter one side of each bread slice. Heat a skillet over medium heat and toast bread butter-side down until golden brown (approx 3 mins).
  3. Flip the bread. Place cheese slices on one piece of bread. Cover pan with a lid for 1 minute to melt the cheese.
  4. Remove bread from heat. Top the cheese layer with fresh arugula.
  5. Layer the turkey generously over the greens. Drizzle with half of the honey mustard sauce.
  6. Fan the avocado slices on top of the turkey. Season avocado with a pinch of salt and pepper.
  7. Drizzle remaining sauce over the avocado. Close with the second slice of bread, toasted side up.
  8. Slice in half with a serrated knife and serve immediately.

Notes

For extra crunch, add sliced red onion or cucumber.
