Method
- In a small bowl, whisk together mayonnaise, Dijon mustard, honey, lemon juice, and paprika until smooth and glossy.
- Butter one side of each bread slice. Heat a skillet over medium heat and toast bread butter-side down until golden brown (approx 3 mins).
- Flip the bread. Place cheese slices on one piece of bread. Cover pan with a lid for 1 minute to melt the cheese.
- Remove bread from heat. Top the cheese layer with fresh arugula.
- Layer the turkey generously over the greens. Drizzle with half of the honey mustard sauce.
- Fan the avocado slices on top of the turkey. Season avocado with a pinch of salt and pepper.
- Drizzle remaining sauce over the avocado. Close with the second slice of bread, toasted side up.
- Slice in half with a serrated knife and serve immediately.
Notes
For extra crunch, add sliced red onion or cucumber.
