Honey Roasted Carrots with Whipped Feta

Ingredients
  

Roasted Carrots
  • 1 lb carrots whole, tops trimmed
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Whipped Feta
  • 8 oz feta cheese block
  • 0.5 cup Greek yogurt plain
  • 1 tbsp lemon zest
  • 1 tbsp olive oil
Toppings
  • 2 tbsp honey
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh mint torn

Equipment

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and peel carrots. If thick, slice lengthwise. Toss with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes, turning once, until tender and caramelized.
  4. While carrots roast, combine feta, Greek yogurt, lemon zest, and olive oil in a food processor.
  5. Blend until smooth and fluffy, scraping down sides as needed.
  6. Spread whipped feta on a serving platter. Top with hot roasted carrots.
  7. Drizzle with honey and garnish with fresh dill and mint before serving.

Notes

For extra crunch, add chopped pistachios or walnuts on top.
