Honey Yogurt Fruit Salad

A refreshing and healthy fruit salad loaded with berries, grapes, apples, and bananas, tossed in a creamy, sweet honey-vanilla yogurt dressing and topped with crunchy pecans.

Ingredients
  

Fruit Base
  • 1 cup strawberries hulled and quartered
  • 1 cup blueberries rinsed and dried
  • 1 cup green grapes halved
  • 1 cup red grapes halved
  • 1 large crisp apple cored and chopped
  • 1 large banana sliced
Dressing and Topping
  • 1 cup vanilla or plain yogurt Greek yogurt preferred
  • 3 tbsp honey adjust to taste
  • 0.5 tsp pure vanilla extract
  • 0.5 cup pecans chopped (toasted optional)

Equipment

  • Large serving bowl
  • Small mixing bowl
  • Whisk
  • Cutting board and knife

Method
 

  1. Wash all berries, grapes, and apples thoroughly. Pat them completely dry with paper towels to prevent a watery dressing.
  2. Chop the strawberries, halve the grapes, core and chop the apple, and slice the banana.
  3. In a large serving bowl, gently combine all the prepared fruit.
  4. In a smaller bowl, whisk together the yogurt, honey, and vanilla extract until smooth and creamy.
  5. Pour the yogurt dressing over the mixed fruit. Use a spatula to gently fold the dressing into the fruit until everything is evenly coated.
  6. Sprinkle the chopped pecans evenly over the top of the fruit salad just before serving to maintain their crunch.
  7. Serve immediately, or cover and chill in the refrigerator for up to 1 hour before serving.

Notes

To prevent apples and bananas from browning if preparing slightly ahead of time, toss them in 1 tablespoon of fresh lemon juice before adding them to the bowl. Do not use frozen fruit for this recipe.
