Ingredients

Crispy Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups vegetable oil for frying
Hot Honey Sauce
  • 0.5 cup honey
  • 3 tbsp hot sauce e.g., Frank's RedHot
  • 2 tbsp unsalted butter
  • 1 tsp crushed red pepper flakes
  • 1 clove garlic minced
  • 0.5 tsp apple cider vinegar
  • 1 tbsp fresh parsley chopped, for garnish

Equipment

  • Deep skillet or Dutch oven
  • Mixing bowls
  • Wire rack
  • Small Saucepan

Method

  1. Thaw shrimp if frozen and pat completely dry with paper towels.
  2. In a bowl, toss the shrimp with buttermilk and let soak for 5-10 minutes.
  3. In a separate wide bowl, whisk together flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper.
  4. Heat 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Remove shrimp from buttermilk, letting excess drip off, and aggressively toss in the flour mixture to create a thick coating.
  6. Fry shrimp in batches for 2-3 minutes until golden brown and crispy. Transfer to a wire cooling rack.
  7. In a small saucepan over medium-low heat, whisk together honey, hot sauce, butter, garlic, red pepper flakes, and vinegar until warm and butter is melted.
  8. Place crispy fried shrimp in a large bowl, pour warm hot honey sauce over the top, and gently toss to coat. Garnish with parsley and serve immediately.

Notes

Do not drain the fried shrimp on paper towels, as they will get soggy. Always use a wire cooling rack.
