Keto Lettuce Wrap Club Sandwich

A crispy, satisfying, low-carb take on the classic club sandwich, using fresh iceberg lettuce in place of bread, layered with turkey, bacon, cheese, and tomato.

Ingredients
  

Lettuce Base
  • 4-6 leaves iceberg lettuce large, washed and dried
Fillings
  • 2 tbsp mayonnaise full fat
  • 4 slices deli turkey breast no sugar added
  • 2 slices cheddar cheese
  • 3 slices Roma tomato
  • 4 strips thick-cut bacon cooked crispy
  • 1 pinch salt and pepper to taste

  • Wooden toothpicks
  • Parchment paper

Method
 

  1. Wash the iceberg lettuce leaves carefully and pat them completely dry with a paper towel. Moisture will make the wrap soggy.
  2. Lay down a piece of parchment paper. Arrange the lettuce leaves overlapping in the center to create a large circular base.
  3. Spread the mayonnaise evenly over the center of the lettuce leaves, leaving a 2-inch border around the edges.
  4. Layer the sliced turkey evenly over the mayonnaise, followed by the slices of cheddar cheese.
  5. Place the tomato slices on top of the cheese and season lightly with salt and pepper. Add the crispy bacon strips on top.
  6. Fold the bottom edge of the lettuce up over the fillings, then fold the sides inward. Roll tightly upwards like a burrito.
  7. Secure the wrap by pushing 2 to 3 wooden toothpicks through the top. Use a sharp knife to slice the sandwich in half between the toothpicks.
  8. Serve immediately while cold and crisp.

Notes

To pack for lunch, wrap the uncut lettuce roll tightly in a dry paper towel, then wrap in parchment paper or foil to keep it crisp.
