- In a medium bowl, use an electric mixer to beat the softened cream cheese until perfectly smooth and fluffy, about 2 minutes.
- Gradually pour in the sweetened condensed milk while mixing on low speed until fully incorporated and creamy.
- Add the key lime juice, lime zest, and vanilla extract (if using). Mix just until combined.
- Transfer the dip to a serving bowl, cover tightly, and refrigerate for at least 1 hour to allow flavors to meld and the dip to thicken.
- Garnish with extra lime zest and a strawberry half if desired. Serve chilled with graham crackers, vanilla wafers, and fresh fruit.
