Ingredients
  

Mango Base Layer
  • 1 cup mango nectar or thick mango juice
  • 0.5 cup lemonade or fresh orange juice
Dragon Fruit Top Layer
  • 0.5 cup frozen red dragon fruit cubes or pureed packet
  • 0.5 cup coconut water or filtered water
  • 1 tbsp simple syrup optional, to taste
Assembly & Garnish
  • 4 cups pebble ice or finely crushed ice
  • 2 slices orange for garnish
  • 2 sprigs fresh mint for garnish

Method
 

  1. In a blender, combine the frozen red dragon fruit, coconut water, and simple syrup. Blend until completely smooth and liquid. Transfer to an easy-pour measuring cup.
  2. In a separate pitcher, stir together the thick mango nectar and lemonade to create the base layer.
  3. Fill two tall glasses completely to the brim with pebble ice or crushed ice.
  4. Pour the mango base mixture evenly between the two glasses, filling them about halfway full. Pour directly into the center of the ice.
  5. To layer, slowly and gently pour the pink dragon fruit mixture over the back of a spoon, or directly onto an ice cube near the edge of the glass, letting it float on top of the orange layer.
  6. Garnish each glass with a slice of orange, a piece of dragon fruit peel if available, and a fresh sprig of mint. Add a straw.
  7. Serve immediately while layers are separated. Instruct guests to stir thoroughly with their straw before drinking.

Notes

Using pebble or crushed ice is absolutely essential for the liquids to layer properly without immediately mixing. Do not assemble ahead of time; prepare the liquids in advance and pour right before serving.
