- Whisk eggs with salt and pepper; scramble in a skillet with butter until soft and set. Set aside.
- Warm tortillas briefly to make them pliable.
- Spread chipotle mayo on each tortilla, then layer scrambled eggs, cheese, bacon, tomatoes, and avocado.
- Fold in the sides and roll tightly to form a burrito.
- Heat a lightly oiled skillet over medium heat. Place burritos seam-side down.
- Grill for 2-3 minutes per side until the tortilla is golden brown and crispy.
- Slice diagonally and serve immediately while hot and cheesy.
Notes
To make ahead, wrap un-grilled burritos in foil and freeze. Thaw before grilling.
