Ingredients
  

Main Ingredients
  • 2 medium zucchini cut into sticks
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs
  • 0.5 cup parmesan cheese grated
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 Cooking spray olive oil or avocado oil

  • Shallow bowls for dredging
  • Knife and cutting board
  • Oil spray bottle

Method
 

  1. Wash zucchini and trim ends. Cut into sticks approximately 1/2 inch thick and 3 inches long.
  2. Set up a breading station with three shallow bowls. Bowl 1: Flour mixed with a pinch of salt. Bowl 2: Beaten eggs. Bowl 3: Panko, parmesan, garlic powder, oregano, paprika, salt, and pepper mixed together.
  3. Dredge each zucchini stick in flour, shake off excess, dip in egg wash, then press firmly into the panko mixture to coat.
  4. Preheat Air Fryer to 400°F (200°C).
  5. Arrange zucchini fries in a single layer in the air fryer basket (do not overcrowd). Spray generously with cooking spray.
  6. Air fry for 10-12 minutes, flipping halfway through and spraying any dry spots with more oil.
  7. Remove when golden brown and crispy. Serve immediately with dipping sauce.

Notes

For extra crispiness, salt the zucchini sticks and let them sit for 10 minutes to draw out moisture, then pat dry before breading.
