Base & Toppings
  • 2 medium bananas ripe but firm
  • 0.25 cup natural creamy peanut butter unsweetened
  • 2 tbsp roasted peanuts finely crushed
  • 1 pinch flaky sea salt optional
Chocolate Shell
  • 0.33 cup dark chocolate chips dairy-free if preferred
  • 1 tsp coconut oil

Equipment

  • Baking sheet or large plate
  • Parchment paper
  • Microwave-safe bowl
  • Knife
  • Spoon or offset spatula

Method
 

  1. Line a plate or small baking sheet with parchment paper. Peel the bananas and slice them in half lengthwise.
  2. Spread a generous, thick layer of creamy peanut butter over the rounded top of each banana slice. Place in the freezer for 10-15 minutes to firm up slightly.
  3. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring well each time, until completely melted and smooth.
  4. Remove the bananas from the freezer. Use a spoon to generously drizzle the melted chocolate over the peanut butter layer.
  5. Immediately sprinkle the wet chocolate with the crushed peanuts and a tiny pinch of flaky sea salt.
  6. Return to the freezer for 30-45 minutes until the chocolate shell is completely hardened. Serve frozen.

Notes

Store fully frozen Banana Snickers in an airtight container in the freezer for up to 2 months. Do not store in the refrigerator.
