- Measure out the Chex cereal into a very large mixing bowl. Set aside.
- In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave at 50% power in 30-second intervals, stirring thoroughly after each, until completely smooth and melted.
- Stir the vanilla extract into the melted white chocolate.
- Pour the melted chocolate over the cereal. Use a rubber spatula to gently toss and fold until all cereal pieces are evenly coated.
- Transfer the coated cereal to a large gallon-sized ziplock bag. Pour in the powdered sugar, seal the bag tightly (leaving some air inside), and shake vigorously until all cereal is coated and no longer sticky.
- Spread the sugared cereal out in an even layer on a parchment-lined baking sheet to cool and set completely (about 15-20 minutes).
- Once completely cool, transfer back to a large serving bowl and gently mix in the Lucky Charms marshmallows. Serve immediately or store in an airtight container.
Notes
Ensure the mixture is fully cooled before adding the marshmallows so they don't melt or lose their crunch.
