Ingredients
  

Fruit & Peppers
  • 2 cups fresh mango diced small (about 2 mangos)
  • 1-3 habanero peppers seeded and minced (adjust for heat)
Liquids & Sweeteners
  • 0.5 cup honey
  • 0.5 cup apple cider vinegar
  • 0.25 cup water
  • 1 tbsp lime juice freshly squeezed
Aromatics & Thickeners
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 1 tbsp cilantro optional, finely chopped

Equipment

  • Medium Saucepan
  • Immersion Blender or Food Processor

Method
 

  1. Wear gloves. Remove stems and seeds from habaneros and finely mince. Peel and dice mangoes.
  2. In a medium saucepan over medium heat, combine mangoes, habaneros, vinegar, water, honey, and salt. Bring to a boil.
  3. Reduce heat to low and simmer for 10-15 minutes until mangoes are soft and breaking down.
  4. Optional: For a smoother sauce, use an immersion blender to pulse the mixture. Leave some chunks for texture if desired.
  5. Stir in the minced garlic and lime juice. Simmer for 1 minute.
  6. Mix cornstarch with 1 tablespoon of water to create a slurry. Pour into the simmering sauce while stirring.
  7. Cook for 2-3 more minutes until the sauce is glossy and thickened. Remove from heat and stir in cilantro if using.
  8. Let cool completely before pouring into a jar. Store in the fridge.

Notes

Always wear gloves when handling habaneros. The oils can cause severe irritation to skin and eyes.
