- Prepare all ingredients by dicing the mango, strawberries, avocado, and red onion into uniform, bite-sized pieces.
- In a large mixing bowl, combine the diced mango, strawberries, edamame, red onion, and chopped cilantro.
- Add the diced avocado to the bowl last to prevent it from browning.
- Drizzle the fresh lime juice and olive oil over the fruit and vegetable mixture.
- Sprinkle with sea salt and black pepper.
- Using a large spoon or spatula, gently fold the mixture together until well combined, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary. Serve immediately with tortilla chips, or chill in the refrigerator for 15 minutes before serving.
Notes
To prep ahead, mix all ingredients except the avocado, cilantro, and lime juice. Store in the fridge and add the final three ingredients right before serving to maintain freshness.
