- In a large bowl, whisk together the crushed vanilla wafers, powdered sugar, and finely chopped nuts.
- In a separate small bowl, whisk together the tequila, triple sec, fresh lime juice, lime zest, and corn syrup until smooth.
- Pour the wet ingredients into the dry ingredients and stir vigorously until a thick dough forms and all crumbs are moistened.
- Cover the bowl and chill in the refrigerator for 30-45 minutes to let the dough firm up.
- Pour the coarse sugar (and salt, if using) into a shallow dish. Scoop 1-inch portions of dough and roll them into balls with your hands.
- Immediately roll each ball in the coarse sugar until fully coated. Place on a parchment-lined sheet.
- Store in an airtight container in the refrigerator. They taste best after aging for 24 hours.
Notes
Keep refrigerated until serving. The alcohol does not cook off, so these are for adults only.
