Ingredients
  

Dry Ingredients
  • 11 oz vanilla wafers finely crushed
  • 1 cup powdered sugar sifted
  • 1 tbsp lime zest freshly grated
Wet Ingredients
  • 1/4 cup silver tequila
  • 1/4 cup light corn syrup
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp orange liqueur e.g., Triple Sec or Cointreau
Coating
  • 1/2 cup coarse sparkling sugar for rolling

  • Food processor or rolling pin
  • Mixing bowls

Method
 

  1. Crush the vanilla wafers into fine crumbs using a food processor or a rolling pin and a sturdy bag.
  2. In a large bowl, whisk together the wafer crumbs, powdered sugar, and fresh lime zest.
  3. Add the tequila, corn syrup, lime juice, and orange liqueur to the dry mixture.
  4. Stir everything together until a thick, cohesive dough forms.
  5. Scoop out 1-tablespoon portions of dough and roll them into smooth, round balls between your hands.
  6. Place the coarse sugar in a shallow dish and roll each ball in the sugar until generously coated.
  7. Place the balls in an airtight container and refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

Must be stored in the refrigerator. Use coarse sanding sugar, not regular granulated, for the best visual crunch.
