Main Ingredients
  • 1.5 lbs chicken breast cubed
  • 2 medium zucchini sliced into rounds
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 0.25 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp smoked paprika
  • 0.5 cup mozzarella cheese shredded
  • to taste salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. In a bowl, toss chicken with half the olive oil, garlic, and dried herbs.
  3. Place zucchini and tomatoes in the baking dish, drizzle with remaining oil and season with salt and pepper.
  4. Add chicken to the dish, mixing slightly with the vegetables.
  5. Bake for 20-25 minutes until chicken is cooked through.
  6. Top with mozzarella cheese and bake for an additional 5 minutes until melted.
  7. Garnish with fresh parsley and serve warm.

Notes

For a lower calorie version, swap mozzarella for a light sprinkle of parmesan.
