- Preheat oven to 400°F (200°C) and grease a baking dish.
- In a bowl, toss chicken with half the olive oil, garlic, and dried herbs.
- Place zucchini and tomatoes in the baking dish, drizzle with remaining oil and season with salt and pepper.
- Add chicken to the dish, mixing slightly with the vegetables.
- Bake for 20-25 minutes until chicken is cooked through.
- Top with mozzarella cheese and bake for an additional 5 minutes until melted.
- Garnish with fresh parsley and serve warm.
Notes
For a lower calorie version, swap mozzarella for a light sprinkle of parmesan.
