- Mince the fresh garlic cloves and finely chop the fresh parsley. Make sure the parsley is dry before chopping.
- In a shallow serving bowl, add the minced garlic, chopped fresh parsley, dried oregano, dried basil, crushed red pepper flakes, coarse sea salt, and black pepper.
- Pour the extra virgin olive oil over the herbs and spices. Gently stir with a spoon to combine.
- Allow the mixture to sit at room temperature for 5 to 10 minutes to let the flavors infuse into the oil.
- Crumble the feta cheese directly into the center of the infused oil mixture. Do not over-stir, allowing the cheese to sit in rustic chunks.
- Serve immediately alongside torn pieces of warm, crusty bread.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Let sit at room temperature for 30 minutes before serving again so the oil becomes liquid.
