Ingredients
  

Dipping Oil Base
  • 0.5 cup extra virgin olive oil high quality
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley finely chopped
  • 1 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.5 tsp crushed red pepper flakes adjust to taste
  • 0.25 tsp coarse sea salt
  • 0.25 tsp black pepper freshly cracked
Topping & Serving
  • 0.33 cup feta cheese crumbled
  • 1 loaf crusty bread for dipping

Method
 

  1. Mince the fresh garlic cloves and finely chop the fresh parsley. Make sure the parsley is dry before chopping.
  2. In a shallow serving bowl, add the minced garlic, chopped fresh parsley, dried oregano, dried basil, crushed red pepper flakes, coarse sea salt, and black pepper.
  3. Pour the extra virgin olive oil over the herbs and spices. Gently stir with a spoon to combine.
  4. Allow the mixture to sit at room temperature for 5 to 10 minutes to let the flavors infuse into the oil.
  5. Crumble the feta cheese directly into the center of the infused oil mixture. Do not over-stir, allowing the cheese to sit in rustic chunks.
  6. Serve immediately alongside torn pieces of warm, crusty bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Let sit at room temperature for 30 minutes before serving again so the oil becomes liquid.
