Mediterranean Ground Beef Stir-Fry

Ingredients
  

Protein and Produce
  • 1 lb lean ground beef 90%+ lean recommended
  • 2 medium zucchini sliced into rounds or half-moons
  • 1 pint cherry tomatoes mixed colors nice
  • 1 medium red onion chopped
  • 3 cloves garlic minced
Cooking and Seasoning
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
Finishes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped
  • 1 lemon wedges for serving

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground beef, break it up, and season with dried oregano, salt, and pepper. Cook until fully browned, about 5-7 minutes. Drain excess grease if necessary.
  2. Add the olive oil to the skillet along with the chopped red onion. Sauté for 2-3 minutes until softened.
  3. Stir in the sliced zucchini and minced garlic. Cook for another 4-5 minutes, stirring frequently, until the zucchini is tender-crisp.
  4. Add the cherry tomatoes and cook for 2-3 minutes more, just until they begin to soften but mostly hold their shape.
  5. Turn off the heat and stir in the fresh parsley. Taste and adjust seasoning with additional salt and pepper if needed.
  6. Transfer to a serving bowl and top with crumbled feta cheese. Serve immediately with lemon wedges on the side for squeezing.

Notes

You can use ground turkey or chicken instead of beef. Be sure not to overcook the zucchini so it maintains a pleasant texture. Wait to add feta to leftovers until after reheating.
