Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1.5 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
Decoration
  • 24 large marshmallows
  • 2 cups powdered sugar
  • 3-4 tbsp milk
  • 1 tube orange decorating icing for nose
  • 1 tube black decorating icing for eyes/arms
  • 1 tube red decorating icing for scarf

Equipment

  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer
  • Piping bags

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Whisk together flour, baking powder, and salt. Gradually add to wet mixture until a dough forms.
  4. Roll dough out on a floured surface to 1/4 inch thickness. Cut into circles and place on baking sheet.
  5. Bake for 8-10 minutes until edges are barely golden. Cool completely on wire racks.
  6. Whisk powdered sugar and milk together to create a thick glaze. Spoon onto cookies to create a 'melted puddle' shape.
  7. Immediately press a marshmallow onto the wet icing.
  8. Allow icing to set slightly, then pipe on faces, arms, and scarves using colored icing.

Notes

Ensure cookies are fully cooled before icing to prevent the glaze from becoming too runny.
