Ingredients
  

Sauce
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 0.5 tsp salt or to taste
  • 1 cup grated cheese freshly grated, mild cheddar recommended

Method
 

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes until it forms a smooth, bubbly paste.
  3. Slowly pour in the milk while whisking constantly to prevent lumps.
  4. Continue to cook and whisk over medium heat for 3-5 minutes until the mixture thickens and lightly coats the back of a spoon.
  5. Remove the saucepan entirely from the heat.
  6. Add the freshly grated cheese and gently stir until completely melted and smooth.
  7. Stir in the salt, taste, and adjust if necessary. Serve immediately.

Notes

Always grate your own cheese from a block; pre-shredded cheese will result in a clumpy, grainy sauce. Remove from heat before adding cheese to prevent separation.
