Method
- If using fresh peaches, wash, pit, and slice them. If using frozen, measure out one cup.
- Pour the coconut milk into the blender pitcher first.
- Add the vanilla extract and the prepared peaches (and ice, if using) to the blender.
- Secure the lid and blend on high for 45 to 60 seconds until the mixture is completely smooth and creamy.
- Pour into a tall glass and serve immediately.
Notes
For a thicker, more ice-cream like texture, use frozen peaches and full-fat canned coconut milk.
