- Carefully remove the rind from the watermelon and cut the flesh into bite-sized cubes. Place in a large serving bowl.
- Wash, pit, and cube the peaches into pieces similar in size to the watermelon. Add to the bowl.
- In a small jar or bowl, whisk together the olive oil, fresh lime juice, honey, salt, and freshly cracked black pepper until emulsified.
- Pour the vinaigrette over the cubed fruit and very gently toss to coat everything without mashing the delicate peaches.
- Crumble the block of feta cheese directly over the top of the fruit.
- Sprinkle the chopped fresh mint evenly across the salad.
- Give the salad one final, gentle toss to distribute the cheese and herbs. Serve immediately.
Notes
Do not dress the salad or add the feta cheese until right before serving, as the salt will draw moisture out of the watermelon and make it soggy.
