Pistachio Pudding Bread

A moist, vibrant green quick bread made with instant pistachio pudding mix, topped with a sweet vanilla glaze and crunchy chopped pistachios.

Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 1 box instant pistachio pudding mix 3.4 oz box, dry
  • 0.5 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 3 eggs large, room temperature
  • 1 cup milk whole or 2%
  • 0.5 cup vegetable oil or canola oil
  • 0.5 cup sour cream or greek yogurt
  • 1 tsp vanilla extract
  • 3 drops green food coloring optional
  • 0.5 cup pistachios chopped, shelled
Glaze
  • 1.5 cups powdered sugar sifted
  • 2-3 tbsp milk or heavy cream
  • 0.5 tsp vanilla extract
  • 0.25 cup pistachios chopped, for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper.
  2. In a large bowl, whisk together flour, dry pudding mix, sugar, baking powder, and salt.
  3. In a separate bowl, whisk eggs, milk, oil, sour cream, vanilla, and food coloring until smooth.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in 1/2 cup chopped pistachios.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Whisk glaze ingredients until smooth. Pour over cooled bread and top with remaining chopped pistachios.

Notes

For a greener color, add 2-3 drops of food coloring. Store in an airtight container for up to 4 days.
