- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper.
- In a large bowl, whisk together flour, dry pudding mix, sugar, baking powder, and salt.
- In a separate bowl, whisk eggs, milk, oil, sour cream, vanilla, and food coloring until smooth.
- Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in 1/2 cup chopped pistachios.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk glaze ingredients until smooth. Pour over cooled bread and top with remaining chopped pistachios.
Notes
For a greener color, add 2-3 drops of food coloring. Store in an airtight container for up to 4 days.
